    Love minestrone soup, This is easy to make in the slow cooker before work. I also made it my own by adding some kidney beans, green beans, spinich and at the end add cooked pasta shells. Great leftovers.

    This minestrone was quick and easy. I added a nice pinch of red pepper flakes for a little kick, and used low sodium vegetable broth instead of beef broth.

    This soup was very easy & very quick. Many of the soups I make require more time in prep & cooking so I only make them on Sunday afternoons. But this can easily be a week night dinner, especially if you do the chopping the night before or in the morning. The flavor was wonderful & it is a winner w/the family. Thank you Giada, for another keeper!!

    The basic version of this recipe is great. But, since I've made it a few times already, I've added the following ingredients at a higher volume:

    2 1/2 ribs of celery
    2 large carrots
    8 cloves of garlic
    32 oz of shredded beef
    2 tbsp tomato paste
    4 tbsp olive oil
    2 bay leaves
    Handful of cilantro

    and I added medium shell pasta to the mix (3/4 lb

    For the pasta, I cook separately until it is "al dente", and then add it in to the finished minestrone.

    The cilantro is used as a garnish, along with mexican cheese. Try this out if you like a spicier version of minestrone, that is beefed up so as to add more servings.

    This soup was fantastic, especially for a cold winter night! It is light but filling and super easy to make. Next time I might try a different kind of bean, as I wasn't a huge fan of the cannellini beans, but regardless this was delicious!

    Great soup! I used ground lamb instead of beef. The smell in the house while cooking the soup was sensational. Husband thought it was great, ate some the next day. Made homemade croutons from French bread to sprinkle on top.
