    This was my first recipe using goat cheese and it was really good. I excluded the beet from the recipe.

    I could never bring myself to eat beets but they are just wonderful in this salad. And besides being delicious, this recipe is healthy. Thanks Giada for another great meal.

    I didn't have argula, so I substituted mesclun, and I forgot to add the dried cranberries. Still, I loved it. I used fresh beets, which I didn't find too hard to deal with. I trimmed the top and root, and boiled them whole. It was only after that I peeled them by placing them in a towel and rubbing the skin off. My husband, who loves beets straight from the can, says this is even better.

    And I'm not even a big fan of beets! This salad is warm and wonderful. The beets carmalize and their warmth wilts the arugula just a little bit. A fantastic mix. This salad will surely impress your company. Thanks Giada!
