OMG! This was fantastic!!!!! My boyfriend and I went crazy when we ate this. I didn't have arugula and substituted Italian mixed grenns and it worked. Highly recommend you try it!

Made this for company yesterday and everyone loved it. The goat cheese clumped up a bit sitting in the salad dressing--although it did not affect the taste--still a delicious dressing. I will be making this salad on a regular basis and will change it up omitting the apples and green beans from time to time.

This is absolutely the best salad I have ever made. I dont think I would add the green beans again. I dont think it needs it. The dressing is outstanding. Love it!

This was one of the best salads I've ever had! I didn't use the vinegar or apple juice concentrate and substituted fresh lemon & lime juice. The fresh thyme was a perfect touch of herby deliciousness! Don't leave it out!

Yummy! Just be sure to cook your beets long enough. I really liked the addition of the green beans and roasting them gave the green beans more depth of flavor. It was an easy salad to make. I used normal red wine vinigar and plain apple juice for the dressing and it turned out fine. I also didn't have fresh thyme on hand so I used dried herbs de provance. This was excellent! I will make it again for sure!

This is the first time I've ever roasted beets. I cannot tell you how delicious they are on their own but with the medley of flavors that goes on in this salad it is absolutely delicious. Plus, you could make the marinated goat cheese and put it on toast, it's that good!

The marinated goat cheese is one of the BEST things I have ever eaten. I am a diabetic and have been looking for wonderful recipes for vegetables so thatI will eat more of veggies and less of bad foods. My Mom (God love her was a very 1960s housewife - so all veggies were basically canned, This is going to be a favorite in my house. I had never eaten fresh beets - roasting them was easy and they are delicious - also I had never roasted green beans - but they cook just right not soggy and yet just cooked so they maintain their integrity. I had leftovers and the greens got soggy in the fridge - so I took all the goodies out of it - added a half can of Italian tuna and had that for lunch today - SO GOOD.

Really good and very more-ish!! The dressing recipe made enough to dress two salads, even though I increased the amount of greens... which is good, because I will be making this again soon!

Love this salad!!! I have never really liked any of the homemade variations of vinaigrettes, but this one is amazing!! I did use a juiced apple rather than apple juice concetrate because I didn't want to purchase an ingrediant only to use 1tbs, but that substition seemed to work perfectly! I would recommend adding the beets after the salad is tossed with the dressing, as they turned everything red, but the flavor was awesome!! This will be added to our regular salad rotation!!

Great! Left out apples and added diced red onions and seasoned pecans.
