I made this last night as a taco filling, and it was amazing! I served it hot and skipped the dressing. Our guests scooped it onto pan-fried corn tortillas and topped it with the traditional lettuce, cheese, sour cream. I cooked it a little longer than the recipe recommends, and it ended up with a great texture and flavor. The jicama and smoked paprika make it really special.

I cannot comment on the whole salad, but I did use this dressing recipe for a simple arugala/tomato/parmesan cheese salad. It is delicious! I added a little chopped shallot, and my guests raved about it. This dressing would be awesome on any type greens or vegetable salad. It is esp. good with a heavier meal, such as the lasagna I paired it with as it is very light and fresh. Great summer dressing! I would even try this as a marinade for fish or chicken.

Pleasantly surprised! Fresh summer corn and tomatoes along with fresh squeezed lemons and limes really made the dish great!

This recipe was delicious - getting rave reviews. I subbed honey for agave, didn't use the jicama or bay leaf, and sauteed the onions in non-cooking spray to cut out 3 tbsp of oil. The citrus dressing was slightly sweet which nicely balanced out the cayenne. If you're not feeding a crowd, cut the recipe in half. It made a huge volume for a side dish. I may use the leftovers to top salads and tacos for the rest of the week.

Gosh Giada...I love your show and everything you make LOOKS so delicious but this too was a real miss. This was supposed to be part of my Cinco de Mayo menu along with Guy's Holla Enchiladas (awesome!! and it was COMPLETELY lacking in any real flavor. I barely brought the mixture to warm on the stove and this all turned to mush. Still love you though!

I made this salad for our Mother's Day BBQ yesterday. The family loved it including my two year old who previously would not touch a black bean. I ate the left overs for lunch today and the salad is just as delicious cold. My family also enjoyed trying jicama for the first time. I wouldn't change a thing about the recipe. Yummy!

I had been looking for ways to use my smoked paprika so when I saw Giada make this I had to try it. Amazing flavors. I followed the recipe exactly - very easy and delicious. Everyone loved it. Perfect smokey flavor for a bbq. Don't leave anything out. One thing, it makes a ton. The recipe say 4-6 servings but I'd say it's more like 8-10 as a side dish. Next time I'll cut the recipe in half for the four of us.
