Blueberry-Banana Bread

Ingredients
  • Butter, for greasing the loaf pan
  • 1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs, beaten
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
  • 1 cup (about 4 ounces) fresh blueberries
Directions

Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.

In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.

Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

A great recipe. I too had to alter a few things for my taste...substituted the 1/2 cup of all purpose flour with 1/2 cup whole wheat flour, cut the amount of sugar and nutmeg in half and add slightly more banana as well as chopped pecans. I also use duck eggs instead of chicken. One thing I'd like to mention is if you're using fresh blueberries consider freezing them on a cookie sheet prior to adding them to your mix: less bruising and color bleeding. Any additional blueberries and perhaps banana can be placed in a small sauce pan with a little orange zest and small amount of water and over a med/low flame, reduced into a lite syrup. Once cooled add a little powdered/confectioners sugar to the reduction and you have an ideal glaze to drizzle across the top. Oh and this recipe is also great for muffins too. I have made this once a month for the last year. Its my favorite easy recipe. I don't add blueberries I just add more banana. My son will eat the whole thing in one day. This is a great recipe. I have made it a couple of times so far. Thanks to the other reviewers, I too was able to make it a little healthier. I used 1/4 cup veg oil and 1/4 cup non-fat green yogurt. I was feeling adventurous, I cut sugar to 1/2 cup. First time I made it, that was the only change I made and it came out perfectly. Moist, sweet but not too sweet, could not stop eating it! Second time, I added about 1/2 cup chopped walnuts, a pinch of allspice, and used brown sugar. I think I like the brown sugar version better. A friend recommended this and it was awesome! Great batter, rises and browns beautifully, moist. Like some of the other reviewers I tinkered a little. I did 1/2 cup of whole wheat and 1 cup of white flour. I started with 1/4 c veg oil and 1/4 c coconut oil and it was moist and yummy, next time I'll try coconut oil and greek yogurt. I usually roll my eyes a little when people are like "it was awesome! Delic!! I did make some changes tho.. I used 1/4 cup coconut oil and 1/4 cup greek yogurt to replace the 1/2 cup veg oil. I also reduced the amount of nutmeg to like an 1/8 tsp, I used frozen wild blueberries and added chopped walnuts! Made them into muffins and they are soo yummy!! So moist and flavorful! This is without a doubt the best banana bread I've ever had or made. It wasn't too sweet and the blueberries gave it a nice added taste. I watched Giada's show this morning, and just happened to have 2 ripe bananas so decided to try it. I used gluten free flour, so needed more moisture. I added one of those single cups of applesauce. I used less nutmeg, as I am not a big fan of it. I love cinnamon however, so used the full amount. I used walnuts instead of blueberries. Baked it a little less than 1 hour. It looked and smelled great. The taste was good too, but I think the salt was too much, so will decrease it the next time, and will add a little more banana. I'm full!! I only made two changes that weren't really recipe altering changes. I used applesauce instead of oil and I did half white sugar and half brown sugar. I used fresh blueberries and 2.5 bananas because I didn't want to throw away the 3rd banana, but I didn't want to use the whole thing either. I've already had almost a third of the bread!! Had to wrap it up and put it away before I ate it all! I will say, the longer it sat the better it tasted! :) ****For high altitude (I live just west of Denver) I increased the flour by 2 Tbs, added an additional Tbs of applesauce, put the heat at 375° and baked for 45 minutes. This is a great change from traditional banana bread. Made it this morning for brunch and whole family loved it. I had to make a few substitution based on what I had on hand, I used frozen blue berries taking 1 Tbs of the 1 1/2 flour to toss in. I've made a lot of banana bread in my time; this turned out fantastic! Super moist and tender. I substituted coconut oil, and added an extra banana but that was the only thing I changed. I will definitely add walnuts next time too. Thank goodness I checked it at 50 minutes and decided to take it out. Perfect. It would have been overcooked and dry at one hour. This is the 2nd time I have made this in 2 weeks. It is SO yummy!!! Of course, I had to change something....all cooks do! I just added toasted walnuts and an extra banana. The first time I used fresh, huge blueberries and the 2nd time I used frozen, wild blueberries....this second batch is still in the oven. Excellent recipe. I eliminated the nutmeg as its taste is overwhelming. I wanted more of a banana taste so I used 3 bananas. After pouring the mixture in loaf pan I took a handful of blueberries and gently pushed them on the top so blueberries would be disbursed nicely. Even my husband helped. While this recipe is very moist and tasty, I cannot taste the banana because of the overpowering flavor of the cinnamon. I will make this recipe again, but without the cinnamon or at the very minimum, reducing the amount to 1/4 teaspoon. I used approximately 1/4 teaspoon of grated nutmeg and will most likely eliminate that ingredient next time. I've made several banana bread using pineapple, zuchnni, walnuts, carrots but this was the easiest ever and so tastey took this to the salon also and all the ladies loved it to, shared it with a neighbor her young children loved it. everything I have tried of yours is wonderful, used your chicken marsala recipe but did it with duck my ex-husband got while hunting did the breast only it was fabulous he ask for it again, took to work a guy who doesn't eat wild game never even knew it was wild duck!!!! love you girl!!!!
