Ingredients
  • Butter, for greasing the loaf pan
  • 1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs, beaten
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
  • 1 cup (about 4 ounces) fresh blueberries
Directions

Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.

In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.

Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

A great recipe. I too had to alter a few things for my taste...substituted the 1/2 cup of all purpose flour with 1/2 cup whole wheat flour, cut the amount of sugar and nutmeg in half and add slightly more banana as well as chopped pecans. I also use duck eggs instead of chicken. One thing I'd like to mention is if you're using fresh blueberries consider freezing them on a cookie sheet prior to adding them to your mix: less bruising and color bleeding. Any additional blueberries and perhaps banana can be placed in a small sauce pan with a little orange zest and small amount of water and over a med/low flame, reduced into a lite syrup. Once cooled add a little powdered/confectioners sugar to the reduction and you have an ideal glaze to drizzle across the top. Oh and this recipe is also great for muffins too. Just cut your cook time down to around 20 mins and use a toothpick to test. item not reviewed by moderator and published
Simple and delicious! (I add 1 cup of chopped walnuts) item not reviewed by moderator and published
I used 1/2 cup of whole wheat flour and 1 cup of all purpose flour. I also used 1/3 cup of dark brown sugar and 2/3 cup of granulated sugar. I added 1/2 cup of walnuts as well. But this is by far my favorite banana bread EVER! Turned out perfectly! item not reviewed by moderator and published
Excellent recipe! The blueberry made this bread super delicious! I made a gluten free version using GF flour, 1/2 cup of sugar, 1/2 teaspoon of salt & just a pinch of fresh grated nutmeg. My husband and my coworker said it tasted like regular banana bread. item not reviewed by moderator and published
Great recipe. I used grape oil because I rarely have vegetable oil on hand and I used 1 cup of wheat flour and 1/2 all purpose. I also added an extra banana because it was there and I knew it would only make the bread even more moist. item not reviewed by moderator and published
I have made this recipe about four times and love it. Very moist and flavorful. The only change I have made is used a little less sugar and added walnuts. Think I will try other reviewer's suggestion of using applesauce instead of oil. Very highly recommend trying. item not reviewed by moderator and published
Delicious. I was out of nutmeg so used 1 tsp of cinnamon. Turned out great. So moist and not too sweet. item not reviewed by moderator and published
Simple and perfect. No electric mixer needed. Had only one banana, so made up the rest of the 3/4 cup with unsweetened applesauce. Can't miss with this recipe! item not reviewed by moderator and published
Love the blueberry & banana combo. My new favorite bread to make for friends. I can make 2 small & keep one for me out of this recipe. Yum. item not reviewed by moderator and published
The easiest and best banana bread ever, but will recommend cutting the salt to 1/4 or 1/2 tsp. I just love how Giada's recipes are so simple and quick yet special. item not reviewed by moderator and published
