Ingredients
- 1 (750-ml) bottle limoncello liqueur, chilled
- 1 cup sparkling water, chilled
- 1 cup fresh or frozen blueberries *see Cook's Note
- 5 fresh mint sprigs, lightly crushed, plus extra for garnish
- Crushed ice
Directions
In a pitcher, combine the limoncello, sparkling water, blueberries, and mint sprigs.
Fill highball glasses halfway with crushed ice. Pour about 1/2 cup of the limoncello mixture over the ice in each glass.
Garnish with mint sprigs and serve.
*Cook's Note: If using frozen blueberries, add them to the pitcher just before serving.

In theory this drink is great, but not in application. One cup of seltzer water is far too little, and simply adding the blueberries, though visually pleasing, does little for the taste. My recommendation? Blend this sucker. It'll bring out the mint and the blueberries MUCH more, and then add seltzer water to taste after blending. Blend it with or without the ice, preference pending. I'm personally going to try it with different berries as well; perhaps raspberries or blackberries. I think that'll help cut the sweetness of the limoncello. As is, this recipe's success at my gathering was 50-50.

YOU MUST MODIFY THIS RECIPE!!! I can only give it 2 stars because although the concept is good, as others have said, you absolutely MUST add more than 1c of seltzer to make it drinkable. I tried it several ways...with some sprite (too sweet, and with a mix of limoncello, absolut citron and seltzer. It was pretty good that way. It has the potential to be a refreshing summer cooler, but you have to play with it!
