This is probably one of my top three favorite meals!!! I made it for the first time and oh my goodness....why go out when you have make something this heavenly at home!!! I got two frozen lobster tails from Trader Joes and steamed them to put on top. They worked perfectly and the meal really was fairly simple to make. The risotto itself is a meal but topping it with seafood- lobster, crab, scallops, or shrimp adds such a decadent touch. Will definitely make this more often!

This is a great dish. I've mad it several times and it always comes out perfect. Tastes like a really good restaurant dish. I use the langostino tails from Trader Joe's instead of lobster.

I used shrimp instead of lobster. The challenge for me was to improve. I did. The grated cheese really enriched the creamy texture of the risotto.

Excellent and so easy! I added a seafood bouillon to the chicken broth to give it a little seafood flavor. Other than that, I followed the recipe exactly and it was wonderful. Great recipe Giada!

I have been wanting to try this recipe for sometime now, and decided to make it for our wedding anniversary dinner last night and am so glad that I did. This recipe turned out fantastic! I followed the recipe exactly and wouldn't change a thing. I was worried the taste of the brandy would overpower the dish, but it was perfect! The only tweak I would suggest is to wait until the last minute to chop the lobster into pieces, and to mix the pieces into the entire risotto at the end so that the lobster chunks can be warmed back up by the heat of the risotto. Otherwise, as others have mentioned, the lobster ends up cold. Having read the reviews in advance, I opted to use this approach, and it worked out great. I will definitely make this again. If you want to impress dinner guests, give this one a try. You won't be disappointed and your guests will be wowed!

This was my first time making a risotto and it was a huge hit! Much easier than I expected and since then, I've altered this recipe and used mushrooms, scallops and shrimp. This is definitely one to keep in the recipe box!!

This was the first time I'd made risotto and it was just terrific! I've made it twice now - once with shrimp - and it has become a family favorite. We all do a Giada "mm, mm, mmm."

I made two changes. I added two minced garlic cloves to the onions and I used a dry white wine instead of brandy. Delicious! My fiance loved it and he kept telling me how much he loved me all evening. Two thumbs up! Thanks, Giada!!

Easy. Amazing. Made for Valentine's Day. Great for company. I don't know what else to say other than maybe use shrimp, crawfish or the best crabmeat you can find! Enjoy!
