Being a college student makes us all appreciate simplicity and frugality. This quick and delicious snack is cost-friendly and easy to make. For those who haven't acquired a love of gorgonzola or blue-veined cheeses, substitute either brie, mascarpone, or goat cheese. (I recommend Rosenborg Danish Blue Cheese, personally. Soon enough, this will become your favorite weekly treat.

I've made this recipe for get togethers and girl's nights and it has always gone over great. The sweet/savory combo is perfect.

I have a great friend from Trieste, Italy who initially introduced me to the delightful pairing of honey with pungent and sharp cheeses. I was skeptical but so pleasantly suprised. I quickly became addicted to it. I was pleased to see Giada prepare this recipe, it looked great! I used whole wheat baguette and skipped the olive oil, because I didn't have the recipe with me, but the toasts were perfectly crisp without it. I toasted the bread added the cheese and added the honey. Very simple. By the way, 3 tablespoons of honey are'nt nearly enough for 36 bruschetta, be generous, it's the best part : It's a wonderful recipe, we had it tonight during the super bowl and everyone really enjoyed it. Giada is fantastic! E una cuoca eccellente!! Grazie!

Made this with blue cheese. The honey makes it soooo good. Had Chunky Lentil Soup and slices of pear.

This was such a yummy appetizer! I made it for a family party and everyone was in awe of how great it actually was. I even got people that hate Gorgonzola to try it and they LOVED it. I will make this again and again. It was the easiest recipe and a definite crowd PLEASER! Thanks Giada :
