Great for football Sundays! Not a real big fan of tarragon so I reduced it to 1 TBSP and used sour cream instead of marscapone. Going to make it again as appetizers for Christmas Party next weekend!

I made this recipe twice over the weekend. The first time, I followed the recipe exactly as listed, and it came out terrific. It was a big hit as an appetizer for a dinner party. The second time I tried this recipe, I substituted the shrimp for chicken, and used cream cheese instead of the mascarpone cheese. I would highly discourage anyone from using the cream cheese substitution, as it came out with a completely different taste. Not good at all. Giada, love the recipe as is, no need for changes!

This one is definitely a keeper...made it as an appetizer for friends and all 14-16 pieces of bruschetta was gone within minutes. Nice flavors blend together perfectly. I think I would like to substitute the shrimp for lobster next time for variation--it would probably be excellent!!

My husband and I watched the show and both loved it. So I went out and bought the ingredients. I made the recipe over brown rice and my whole family loved it even my pickest eater loved it. This will be made many of times. It was so easy to make. The only thing I would do is add red pepper flakes for a little spice. I am for sure it tastes good on the bread. I will be making that for when friends comes over. Thanks Giada.

This dish turned out very nicely, but if your pocketbook is in consideration I would suggest substituting a few things. The ciabatta bread can be subbed with any relatively crusty bread and the marscapone I would HIGHLY recommend using room temperature cream cheese instead. It is much cheaper and has much more flavor. Didn't really taste the arugula so I would cut that out all together or get a cheap colorful green like parsely.

Giada is a GENIUS. We made this recipe exactly as listed and it couldn't have been any better. The combination of flavors was amazing and it will be a recipe repeated at every dinner party from here on out.
