    I did this with bacon rather than pancetta and it is still good, just top with crisp bacon at the end. Not my idea, it was Rachel Ray's.

    I made these yesterday for Thanksgiving and I was so pleased with them. I used the pancetta, and I liked the flavor very much, a step up from the expected flavor of bacon. I cut the larger sprouts in half, left the smaller ones whole, I liked the effect that had on the dishes appearance...and made for more even cooking. Most definitely won't save this recipe just for holidays.

    We really enjoyed this -- the family members who don't normally like Brussels sprouts are the ones who love bacon and garlic, so this went over very well as the green vegetable on our Thanksgiving table. We used bacon, not pancetta (she said on the TV show that would work, and it did. I think it would be better if the blanched sprouts were halved or quartered before adding to the bacon. That's what I will try next time, and there will definitely be a "next time" with this recipe.

    I enjoyed this dish, but next time I make it I will add only 1 tbsp of oil, and use only 1 clove of garlic. Otherwise very good.

    Excellent. A keeper. Added thinly sliced onions right after the garlich. Would suggest you try onion, too. Might try a little cider or wine vinegar next time. Pancetta was nice alternative to bacon. Will definately use again.

    The bad news was that I finished these a few minutes before the rest of the meal and spent the rest of that time fighting to keep people away from them. These are soooooooooooo good and so incredibly easy to make. Everyone raved about them, including my other half who hated the thought of brussel sprouts.
