This recipe was simple and easy. The vanilla bean gave the risotto a slightly sweet taste and was good with the squash. I found that it needed 6 cups of broth instead of 4 cups. We loved the flavor and texture. I would definitely use this receipe again.

I followed the recipe closely, very labor intensive, and it didn't have much flavor other than a bit sweet. My family didn't care for this at all.

This dish, though time consuming, is easy & spectacular. It is delicate, creamy & pretty. The perfect comfort food that will be one of basics from here on! We adjusted more cooking time anf broth for our high elevation. give everything half again more time & a cup or two more broth at 6000 ft +. We made it with & served it with a buttery but fruity "new style" Chardonnay. I had my doubts, being a big fan of classic, "oaky" chardonnays. The combination was to die for. Especially in fron of a fire on a frigid Colorado night! Thanks Giada!
