    Absolutely delicious! Now one of my all-time favorite soups!!
    I had a hard time cutting the squash, so figured out that if you microwave it in pieces for a couple of minutes, the peel is much easier to remove - just a helpful hint!

    Outstanding, easy and fairly quick! The entire family loved it! I used bouillon cubes instead of broth (I was out, so I didn't add any salt. I also used bakery cracked wheat bread with Provolone cheese. Otherwise, followed the recipe to a T. This one's a keeper in our books!

    I enjoyed this soup sticking directly to the recipe. When I make this again I will add some heavy cream for thickness and brown sugar for a little more sweetness.

    I have been looking for a squash soup recipe for quite a while now and this one certainly delivered on flavour without the calories! If you are a Weight Watcher like me, this soup translates to 2 points per cup and its filling and very YUMMY! Another great recipe, thanks Giada!

    I love that this soup delivers a creamy texture without the addition of actual cream. Definitely salt at the end to taste -- my batch needed hardly any salt. My kids liked the slightly sweet flavor. I didn't make the crostini, but for my husband and I, I garnished each bowl with some crumbled feta and Almond Accents (a seasoned, sliced almond salad topping. That added a great little crunch and a nice flavor contrast, and I highly recommend it!
