It was the first time I cooked with butternut squash, and It became my new favorite soup for the fall!!! The recipe was easy to follow and basically fools proof. Thank you Giada!

Very tasty, just as many reviewers indicated and so easy to make. Agree with others, salt and pepper at the end as I only need to add a small bit of pepper. The fresh sage was great between the soup and the crostini. A great fall favorite of ours now.

I was concerned the soup would lack flavor without roasting the squash first, but I was pleasantly surprised at the rich, earthly taste. Great soup!

I followed the recipe exactly & it just didnt taste good. We like butternut squash on the grill but I guess not in a soup. We dumped it down the drain.

I have had a bag of frozen chopped butternut squash in my freezer for awhile and we are moving soon so I'm cleaning out the freezer. The bag of squash I had totalled 3.5 cups so I halved the recipe measurements. This was so easy, fast and delicious, even though it was probably not what Giada intended. I found my soup to be less creamy than other reviewers and I believe that's b/c of the frozen squash, also, I don't have an immersion blender so I used a potato masher. I didn't add any salt. The crostini was good too, but I had used italian bread (it's what I had on hand and mine didn't get crispy like crostini should - the crostini itself, though, would make a yummy snack!

I made this for the first time today. So glad I did! Very simple to make and not very many ingredients. I'm glad I didn't add salt until the end because it didn't really need much. The fresh taste of the squash was delicious. I will make this again and again.

I LOVE butternut squash soup, and this was by far the best recipe I have ever used! It's also extremely easy to make and relatively fast for a weeknight meal. My husband had never tried it and was skeptical about eating squash soup, but he even loved it and went back for seconds! This recipe is definitely a keeper!

This soup is fantastic. It is perfect on a cold day-which we have alot of during winter in Saskatchewan. Even my little 1 year old loved it.
