I don't really like butternut squash, but my mom loves it, so I decided to make this soup. It was delicious! I did add 1/2 a cup of heavy cream because I wanted it to be a creamier soup. The flavor was excellent. And my dad enjoyed it!

Wonderful and easy recipe. I tried roasting the squash, onions, and garlic first to intensify the flavor even more -- I'll definitely make this again.

The soup is good, very tasty and easy to make. I suggest having your squash diced before starting the onions etc. It takes a while to dice that much squash. I left my soup a bit chunky. It was delicious. I definitely will make this again.

I made this for me and my husband. He is a vegetarian so I thought it would be a great option. The taste of the soup had no flavor and we used vegetable broth instead of chicken broth-not sure if that made a difference for the reciepe or not. I added sweet basil and it seemed to have more flavor.

I have to preface this by saying I don't normally like soup. But, in an effort to eat better at night, I cooked this last night for myself and my husband. And, I trust Giada to always have great recipes. We both thought it was excellent. A nice thick consistency and much better than store soup.
The recipe calls for a lot of oil and butter if you are trying to lose weight. While I get that Giada is going for taste and not the waist, I couldn't justify all the fat. So I left the oil out and the flavor still was great.

I followed the recipe exactly and added just a 1/8 c of heavy cream at the very end while pureeing. Very simple and time allowed was more than adequate.

Very good and easy. I love butternut squash and I just found an easy and delish recipe that my whole family enjoys. My 11 month old had a small bowl and she did not fuss when she was eating.

I was a first-timer for any kind of squash soup. I made this the night that I saw Giada make it on the show. It was quick and easy! It helped that my produce department at the store offered to peel and cut up the squash for me, so that saved me a lot of time and energy. I pureed all of the soup in batches, in my food processer. Next time, I might leave it a bit more "chunky" and not puree all of the soup to a smooth consistency. The flavor was great and the crostini took it over the top! Don't forget the salt and pepper at the end. Thanks Giada!

I love butternut squash and all of Giada's butternut squash recipes. The combination of ingredients was perfect. I used a little less sage, but I probably could of used the 1/4 cup. The crostini with the sage and fontina was excellent as well. Thanks Giada! :- (PS-Even my meat and potatoes only dad loved it!
