This indeed was a wonderful soup. I put the squash in the microwave as suggested by another reviewer and it worked out perfectly. Soup is very creamy.. I didn't have any fontina so I just added a few garlic croutons before serving. Big hit in our house and will definitely make again!!! thanks Giada.

This soup had excellent flavor and was so easy! We did indulge and add a swirl of cream before serving - adds a creamy richness that we love, but was good without as well. Also, try adding a dollop of sour cream and some snipped chives at the end. Adds nice color. I didn't have sage, so used dried rosemary - still fabulous!

I thought this soup was the best ever, no need to add any other ingredients, it was great just as the recipe called for. Very simple, didn't have to buy anything but the butternut - perfecto! Thank you Giada!

Easy, tasty, and the sage was great in it. I also added one peeled, chopped, cored apple. Just because it sounded good. It was!
To prep the squash: Wash and poke with a knife in a couple of places. Microwave for 4 minutes. Let cool slightly and chop and peel. Much easier and doesn't change the final dish.

This soup is so delicious! I love that it is also low in fat because there is no cream, quite honestly isn't missed. The sage adds so much to the overall flavor and I love that it doesn't have the typical nutmeg or cinnamon. I do add more salt & pepper for flavor. Enjoy!!

This one is a keeper! It was a bit labor intensive to prep the squash but it is well worth it. Love the fact that there is no milk or heavy cream in this recipe and it doesn't need it. I did add a little sprinkle of nutmeg as others had suggested and it made all the difference! I also only added 4 small sage leaves to the soup and it was enough. Will be making this often. Thanks Giada!!

This was very tasty! The texture was silky smooth, and it wasn't too thick like some other recipes reminiscent of baby food puree. I forgot to add the herbs, but no one noticed, and everyone loved it! I made some pumpernickel croutons to go with it instead of crostini. I will make this again for sure!
