Such a bummer!! After, trying tons of butternut squash soup around town, I knew I had to make some for myself. I read through the reviews for this recipe, most were great, but others said that the soup was bland and lacked flavor. I just decided to try it since so many people gave it great reviews. Well, after making this soup exactly how the recipe calls for, I am sad to say that it seriously lacked flavor! I really wanted to love it, but I didn't! On to the next recipe!

Great easy to make fall/winter soup. I used veggie stock instead of chicken so it was vegetarian. I have made this soup several times now and I have used different types of winter squash from my garden each time such as Hubbard, Sweet meat and Butternut. It always turns out wonderfully! I have added a couple garlic cloves as well with the onion gives it that garlic flair I love and I have made it with a pinch of cinnamon and sugar at the end made it sweet and savory. The crostinis work great with mozzarella as well. A great soup to play around with!

YUM-O!! I made this recipe yesterday for a Thanksgiving dinner I had with a group of girlfriends. I actually doubled the recipe since I was serving for 10. Everyone loved it! I did take the advice of some other reviews. I added crushed red pepper as well as extra minced garlic. It was very easy to make except for one thing. I clearly did not pick out the most ripe butternut squash because they were pretty hard which made it difficult to peel with a knife. Giada made it look so easy on the episode. Is there something you can do to soften the squash for peeling? Thanks Giada for a wonderful and tasty soup recipe!!

The crostini and cheese really made the soup. I added a pinch of red pepper flakes and 2 more cloves of garlic to give it a little kick.
Easy to make, I served it to a party of 30, ranging in age from 4- 85 and everyone did come back for seconds.

This soup was fantastic! It was my first time attempt for this recipe and I have to say it was the best butternut squash soup I ever had. The only addition to this recipe was that after I hand blended the soup I added a drizzle of cream and blended that with a couple tbsp of dark brown sugar for extra richness. I will definitely serve this for the holidays!!! You must try this soup, its easy, healthy, hearty and delicious!

I didn't even realize I liked Butternut Squash until this soup. Delish! I only had dried sage but it worked fine, all I had was about a tablespoon, so that's how much went in.
Next time, I'll probably cut the baguette into cubes then toast them since they work great that way to soak up some soup in the bowl. Yum!
Costco had 2lb packages of the squash already cut into cubes, making this officially the easiest dish on the Thanksgiving table.
