Excellent party and every-day soup, I'm tripling this recipe for Thanksgiving. My only change is I used low/no sodium broth, and add sea salt and pepper to taste. The sage flavor with the squash is to die for.

This is a nice variation for butternut squash soup. I love the crostini and recommend using a larger diameter loaf of bread so you have lots to dip in the broth. I don't have an immersion blended and used my food processor. It worked fine, but it would be better to have an immersion blender - less mess.

I made this recipe foe a "Girls Night In" birthday celebration! The ONLY thing I changed was that I did was pre roast the squash with a little butter, olive oil, sage, salt, pepper and some shallots. Then I boiled with the rest of recipe. The girls were so impressed with this recipe, I was asked to bring it to Thanksgiving Dinner!Definately give it a try!

Love this soup. It's easy to make and everyone I make it for loves it. I made it at Thanksgiving Pot Luck Lunch at work. Prepared it the night before, even the crostini, and put the soup in a slow cooker to heat up before lunch the next day. Perfect! The crostini softens up in the soup. I also used a regular blender instead of immersion blender. I just ladle batches into my blender, blend it, and pour it into a bowl, then dump the soup back into the pot to add my salt/ pepper to taste. Everyone at work loved it. I printed off Giada's recipe for a few people. Hope their families enjoy this too. I am making it for Thanksgiving dinner next week at my parent's house. It'll be great.

Delicious! This soup packs quite the punch on flavor and richness. Even my kids loved it. It was also just as delicious the next day! Definitely a keeper!
