I have made this a few times now & I add a splash of cream in it to make it extra creamy..I also add a bunch of pepper but that cuz I love pepper! Its delish!!

Added a little nutmeg, a pinch of allspice, and a little cayenne for heat. So delicious. I didn't make the crostini, instead did the Parmesan garlic croutons from Real Simple. Will make again!

This was first time making this recipe and it was fabulous. My neighbor stopped in and tasted it and was pleasently suprised. My husband who has never had this kind of soup before tolad me I have to make it again. I didn't do the crostini but I did a dollup of sour cream and it was delicious. This is a keeper

I have never been a huge fan of squash of any kind, but this recipe changed my mind. Similar to the asparagus soup in the process, this too was a delicious recipe! Very sweet and creamy. I think next time I would use the crostini as a side and put something else crunchy on time. Jacques Pepin puts pistachios on top of his butternut squash soup-- might try that next time. All in all, a DELICIOUS recipe!

I impressed myself.. I got an immersion blender for christmas and was finally able to use it.. This recipe is easy and it's so tasty.. I will definitely be making this again !

This soup is absolutely delicious!! It was my first time making butternut squash soup and it exceeded my expectations. I actually didn't blend it at all, instead let it cook for a long time and all the vegetables melted and it was perfect.

This soup is delicious and so easy (except maybe cutting up the squash! The crostini is very good with it although I use it as the bread for the meal rather than a garnish. I use vegetable stock and rubbed sage in the winter when my herbs from the garden aren't available. Every variation has been wonderful. Sometimes I drizzle a little butternut squash seed oil on each bowl before serving which gives it a slightly nutty flavor.

This is SO delicious!! I have always been indifferent to butternut squash until I had this soup. I've made it for friends and family and everyone raves about it. The sage adds incredible flavor to the soup and the crostinis are a perfect addition.
