Just made this for dinner! I substituted green bell pepper for the poblano, and reduced the chilli powder from 3 Tbls to 1 tsp because I don't like heat. It was delicious : Even the boys in my family were open to trying the quinoa with it, when normally they avoid "health" foods.

Excellent! Quick and easy. I added more beans, everything else as printed. Heated up just a touch with jalapeños.

Wow, is this every tasty!! I added more beans for my taste and roasted the chiles first, but kept everything else the same. I can't imagine making chile any other way after eating this. Such a complementary mixing of flavors and healthy. I loved the quinoa base. Big hit with husband and grown children!

I make this recipe almost once a week! Everyone in my family LOVES it. I skip the celery and add a chopped serrano. Serve with corn bread and white cheddar...some times sour cream. Big hit..a must have!

This recipe is really really yummy! I used the left over turkey I had from Thanksgiving and made my own turkey stock instead of using chicken broth.... it came out amazing! so full of flavor! Thank you Giada! left over Thanksgiving turkey never tasted this good!

This dish comes together beautifully and in much less time than stated in the recipe. It is quite delicious and is an easy, filling dish for the colder weather.

I love Giada. This is one of her best recipes; I'm surprised it hasn't taken off yet! No modifications, it was perfect. In other words, stop searching for other chili recipes - you've found your keeper here.

This is the most flavorful chili I have ever made, so delicious! My local grocery store did not have poblano chiles or cilantro, so I substituted chopped jarred jalepenos and red chili flakes and green onions. The quinoa is makes it hearty and the 2 together is a great combination. The spice combination is amazing!

This was the first time I ate quinoa. LOVED IT! The chili was great too, but preferred them separate.
