This is a good recipe for those of us who don't cook often. It's easy and tastes wonderful! Its a rare day that I decide to cook, but I'll definitely be making this again :

This is the best caponata ever!!! The only thing we omit is that we don't rub the garlic on the bread because it OVERPOWERS the dish. We eat this at least once a week!!

this recipie is so fantastic, and reminds me of all the little sandwhich shops and all the vendors with sandwhich carts in the cities of italy. incredibly flavorful sandwhiches, wrapped up in wax or butcher paper. Simple fresh and fabulous....like this is. It's a keeper in my recipie box.

I never liked eggplant and have not eaten it for many years. I don't know why I decided to try this recipe but am glad I did. It is outstanding and I can't get enough of it! I made a couple of changes and added 2 finely chopped cloves of garlic. I also added some extra raisins (and used golden raisins. I will serve this the next time I have company for dinner. Try it!

I've been living on this caponata (with variations all summer! Great, cool, healthy treat to keep on hand in the refrigerator, and it gets better and better each day (it never lasts more than two or three days in my house. The recipe is very forgiving and accommodates many other vegetables. I generally leave out the peppers (not too crazy about them and substitute a couple of sliced zucchini instead. Shredded carrots are a good addition. I've also tried using a large can of good tomato sauce when I've been out of the diced tomatoes, and the substitution works wonderfully. What a find!

These caponata sandwiches were very good, but next time I don't think I would put the sugar in it. The fresh mozzarella Is so gooey and yummy! They make very good leftovers too!

I made these and they were great. Was having the girls over from work and I served them on smaller portugese rolls. The raisins were what made each bit special.

This was delicious! I used long japanese eggplants and added 1 small can of tomato sauce and some chopped green olives. Perfect with crackers.

I must admit the raisens concerned me initially, but they were my favorite part of the dish!
