Giada, GREAT JOB! I made all three recipes from the show for my 1 year anniversry. My boyfiend Joel thought he didn't like eggplant until he tried the caponata sandwiches.

This Caponata is the best I have ever eaten. The sweet and sour taste of the sauce enhances the flavor of the vegetables. You want your kids to eat veggies, SERVE THEM THIS!

This is just great. It's especially good if you can get fresh made mozzarella cheese. I liked scooping out the bread a little in the center so the caponata stayed on the sandwich.

This recipe was so easy to make and was so delicious. I made it for a friends Graduation party and so many people asked me for the recipe, that's how good it was. Thank you for making me a star for the day but all the credit goes to you.

This is not only absolutely delicious, but also quick and easy! I had some fast talking to do to get my husband to agree to add raisins to the pan. Not only do we both love it as is, but my difficult-to-please-excellent-cook-sister-in-law who dropped in while we we making this raved! (She's still raving about Giada's stracoto w/porcini mushrooms! The leftovers taste as wonderful! This can easily be made ahead of time, and served as an appetizer or sandwich. We're next going to try this with penne w/parmesan as another person suggested. Thank you, Giada!

I pounded out boneless skinless chicken breasts and pan fried them in bread crumbs and olive oil. Then I topped them with the Caponata. The complex flavors made this dish the hit of the party.

These sandwiches were fabulous!! The caponata was so easy to make and tastes great. I even ate it by itself with some Parmesano Reggiano on top. :
