    I served this for a luncheon and received rave reviews. It was easy and delicious. Cutting the vegetables smaller than the 1/2-inch called for may make it easier to eat.

    Be careful with the sugar. I could have used a little less than the recipe, so start with half and add to taste. The mozzarella has the perfect touch to this easy and delicious sandwich.

    Giadia,
    This is an excellent recipe with many tasteful flavors. Like many Italians we have many uses for eggplant and this one is a new for me. The rasins,capers and vinegar really work your tastebuds along with the rubbed garlic.Thanks I am passing this on and your show to friends and relatives. It is what I call Old World and so Rustic(simple. Thank you very much I will use this in good health.

    This recipe is just wonderful. I made it on Saturday and didn't eat anything else for lunch or dinner until I finished it today! It's just delicious. You absolutely have to try it!
