This was easy to prepare and that is probably why i chose it. But, i followed the reciepe by cutting the grapefruit wheels. And, this became my problem with the salad as the "wheels" were just too large and did not break up in the salad due to the rind that held the "wheels" together. Sorry.......must be a mistake that i made by not peeling well enough???? But, I would recommend cutting the grapefruit wheels into pieces. This my only problem with the salad.......otherwise it tasted very good. Just messy to eat due to hunks of g'fruit.

I've made this salad 3 times now, although I used oranges instead of grapefruit, and have been asked for the recipe all three times. Leftover salad even tastes wonderful the next day!

This was my first taste of fennel and it was so good in this salad. Also loved the carmelized onions. They were a nice touch. I made all recipes in this episode for my family and friends and was thrilled with how delicious everything was. We felt healthy with a gourmet meal!

Caramelized onions:
3 tablespoons olive oil
2 onions, very thinly sliced
1 tablespoon balsamic vinegar
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Ingredients
Dressing:
2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
1 teaspoon honey
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
Salad:
2 pink grapefruits
1 head romaine lettuce, thinly sliced or torn into 1-inch pieces
1 large fennel bulb, trimmed and thinly sliced
1 small cucumber, peeled, seeded and thinly sliced
3 scallions, finely sliced
1 tablespoon chopped fresh thyme leaves

I made this last night exactly to the letter of the recipe. I was a little hesitant to include the raw fennel but did anyway and I'm glad I did. This is a delightfully refreshing salad for warm weather. The sweetness of the onions with the tartness of the grapefruit was scrumptious. Our guest requested the recipe to bring to a potluck they have coming up soon.

Was very tasty, but I don't know yet if I'm a big fennel fan. Might make it without the fennel next time. The onions were the best part!

This is one of the most delicious salads I have ever made. Every component is subtly blended to make a wonderful addition to your table.
