This was absolutely delicious. I made it as a side dish for Mother's Day dinner. It was a big hit with everyone... grandparents to kids. I saved some of the bacon drippings to saute the bread crumbs, along with the recommended butter. I also added a touch more flour as thickener. The consistency was creamy, not at all soupy. We'll definitely have this again.

Just made this for my family and they loved it!! It was a little soupy... I would use a little less half and half, or possibly more flour. I also left out the bread to keep the carbs down. The flavor was amazing! Rich and Cheesy (I used a little extra sharp cheddar! The capers were a great addition as well. Definitely will make this again

I am eating this meal as I type this review. It's really tasty but like a few said, it's soupy. Not sure what I can do to make it less runny? Add more flour? Gruyere cheese is awesome, and so are the capers!

I tried this recipe last night. All went really well until I went to top it with the bread crumbs. WOW that was a lot of crumbs! I dished it up and had to brush off the crumbs. They over powered the cauliflower. Once you get past it the rest of the dish tasted pretty good. Next time I make it I will reduce the amount of crumbs.

This was okay. My husband liked it better than I did. Must admit however I used fontina cheese which probably made a difference. May make this again but next time with the gruyere cheese.

This gratin is incredible. I added extra sharp white cheddar cheese to the mixture and the crust. I like a lot of cheese in my baked dishes! I used 1/2 heavy whipping cream and 1/2 half-and-half in an attempt to cut down on the calories that I wasted on the extra cheese. I used half fresh breadcrumbs that I put in the food processor and half panko crumbs. The capers threw me off a bit, but I'm very glad I chose to keep them in the recipe - they gave a tangy bite that a creamy dish sometimes need. Excellent Giada! Your recipes always impress!

Made this recipie and it was only 'ok'. Perhaps I did something wrong, it really didnt get to creamy and I found it a bit on the flat side. Will try it again...

We had a lingering bag of frozen cauliflower in the freezer, finally found a use! Was delicious.. although we left out to capers.... This will go into our favorites and we'll be making it again!

This has got to be the best side dish I've ever had! I could have eaten the entire dish myself.

I always think using bacon in a recipe is cheating, but so what? I think bacon and cauliflower were soul mates in a past life. I think this may be the yummiest and most successful side dish I've ever made. You should make it for someone who hates eating veggies; it'll change their mind.
