When I saw this recipe, I wanted to try it, but didn't want to go to the store in the rain to get cauliflower. I used broccoli instead and left out the capers. Turned out excellent, and since then I have made it several times, always to rave reviews. I even tricked my son into eating vegetables by putting macaroni noodles in it and making a sort of macaroni and cheese with bacon and cauliflower.

I have had no trouble with it being runny at all, as another review has stated, and I highly recommend this. You just can't go wrong with this, or even whatever you want to try with this recipe.

This recipe was really tasty. My husband hates cauliflower, but he really liked it. Although, I must admit, it was hard to taste the cauliflower when it was covered by cheese, cream, and bacon.

Make this a day ahead...the flavors just intensify...I hste people who make all kinds of substitutions, but I only had cheddar and was too tired to go to the store. The dish was wonderful, and even better the next day. I will definatelty make for company!

I agree with a previous post. The dish came out very soupy and the cauliflower were still a bit firm. I couldn't continue to bake too much longer because the bread crumbs were starting to burn. I don't think the choice of cheese added much to the dish either. I would try the dish again with many adjustments.

Before trying this recipe, I had not tasted one cauliflower dish that I had liked in my whole life, but watching Giada make this one tempted me to give it one final shot, since I knew I liked all the other ingredients. But just in case the cauliflower taste would be overwhelming, I also added fresh asparagus (in bitesize pieces to the recipe during the boiling process to break up the flavor. IT WAS GREAT! The consistency of the cream sauce with the cheese and the texture of the veggies was great! Then the crispness of the breadcrumbs on top just put it over the top. I added a bit of Old Bay seasoning to the cream mixture for flavor. Once I removed the baked dish from the oven, I also garnished it with a bit more Old Bay and fresh parsley. I have FINALLY found a cauliflower dish that I LOVE! Next time I'll try it with cauliflower and broccoli.

I made this recipe for a dinner party. It was a huge hit! Everyone wanted the recipe. I thought the capers and gruyere cheese combination was wonderful. I used sourdough bread leftover from dinner the night before for my topping and the combo was excellent. I will definitely make it again but for every night dinner would probably use fat free 1/2 and 1/2 to cut some of the fat. I use the precooked bacon zapped in the microwave and the steamer bags to steam my cauliflower and that was an immense time saver!
    Loved it in the Ville!

I really like this gratin. The capers are an excellent addition. Mine didn't seem very cheesy or thick. It seemed more soupy but I really liked it anyway.

This was very very yummy! I omitted the bacon as I don't eat meat, and I used fat free half and half, although it would have really been better with cream as Giada suggested. i'll definitely make this again!

I'm not a fan of most of Giada's dishes but I love cauliflower, bacon, cheese and cream, so what's not to like?? I don't care for capers so I omitted them and substituted a mixture of monterey jack and mild cheddar for the guyere. It was a huge hit with my family and I can't wait to get to the grocery store to get the ingredients to make it again.
