This was the perfect side dish for the chili! I wanted to eat the whole loaf by myself, but I had to contain myself....

This was fabulous! The only thing that I should have done a better job of was to add enough salt. I was worried about oversalting so I kind of skimped on the amount of salt that I used, but the bread could have used a bit more to bring out all the flavors better. However, it was still delicious! Be sure to spread a very generous amount of the special butter mixture onto the ciabatta. Next time I will also try using 3 cloves of garlic, minced, instead of just 2 since we like more garlicky flavor. We stored the leftovers wrapped in foil in the fridge, & they were still great for the following few days after warming them up in the microwave oven.

This is a good recipe for something other than my normal garlic bread. I made this to go along with Giada's chicken chili tonight. My bread seemed to get really hard, before the butter/cheese was browned and melted.

    WOW WOW WOW!
I made this with a 'five cheese' italian blend instead of cheddar (not a fan of sharp cheddar and my guests couldn't get enough... I should've quadrupled the recipe and made 4 batches instead of one!
It will be hard NOT to make this stuff every day!
