These were delicious! I made a few changes that worked very well. Instead of wrapping each date with prosciutto, I put a piece inside so the prosciutto went farther and I was able to add more. I also added a roasted almond to each one. Everyone thought they were so mysterious, but they all went!

Fantastic!! I am from Spain and I love Iberian Ham. Here in USA is very dificult to find it but I do it in mariscoiberico.es/iberian-ham directly from Spain, best quality and at the same price that you pay in Spain!! Wonderfull"

After watching the video, I could not stop thinking about making this recipe. The only missing ingredient was the mascarpone cheese so I went out of my way to buy it tonight. It was worth the trip. Amazing, said my husband. It was like being at a Napa tasting event. My son loved it too. Will make this again.

Made this tonight as dessert and they're yummy!!! I added 2 tsp. honey to the cheese mixture to bring out the sweetness of the dates. These are also great served with a topping of balsamic.

These are great as is but even better if you heat up your indoor grill or pan and add a little olive oil and brown them at med high for about 3 or 4 minutes. The prosciutto caramelizes and the cheese inside gets warm a kinda gooey. You don't even have to eat them hot or warm..they are fine at room temperature after being cooked and still have the same appeal with the caramelization etc.. I often use black mission figs for the same application. I also use goat cheese without the marscarpone because it is so expensive and sometimes masks the flavor of a good goat cheese which is unbeatable-especially the tangy flavor of goat cheese with the sweet flavor of prosciutto..yummy!!

So simple, so wonderfully salty and sweet. Made them for my wife's book club meeting and they were a hit. Thanks Giada!
