    This was a great dish and would be perfect for a special holiday brunch! I saw this episode today and it sounded so good, I had to make it for dinner tonight! I did have to alter some of the ingredients because of what I had on hand. I used an Italian Blend cheese and a roasted turkey breast. I also doubled the recipe because I have a large family (5 kids and this was our main dish for dinner. I baked it in an oval 7 quart cast iron casserole dish and it came out beautiful! Everyone ate it up and I don't even have any leftovers!
    Although the show stated bake it for 30 minutes and the recipe said for 60 minutes, I baked mine for about 45 minutes. I did start watching it after 30 minutes just because of the difference. I guess start watching yours after 30 minutes, depending on the size of your dish and the amount you make.

    On the show, Giada instructs to bake at 400 degrees for 30 minutes, the written recipe says 400 degrees for 55-60 minutes. which is correct??????

    I followed the recipe exactly except that I baked them in individual 16 oz. ramekins. I used "Just Chicken" from Trader Joe's and it was really dry. I don't know if using rotisserie chicken would be better? Next time I will make this as a side dish, double the amount of spinach and leave out the chicken. The souffle itself has a nice flavor and nice presentation.
