Yummy! I am always looking for delicious, healthy one-pot meals. This is pretty easy to make and everyone raves about it. I left out the bay leaf because I didn't have one and substituted regular bacon for the pancetta. I have also tried it with canned artichoke hearts. Either way it's delicious.

I made this and it was delicious, although I did change a few things. I added some diced canned tomatoes and a pinch of red pepper flakes. Instead of pancetta, I had thick sliced bacon on hand and substituted with great results. Served it alongside a small green salad, garlic bread, some nice wine and even the in-laws with thrilled. I'll make this again and again.

This is a fabulous recipe that I've even served to company. Everyone loved it even though it's sort of a peasant dish. All that's needed in addition to this delicious dish is some crusty bread and a bottle (or 2 of hearty red wine. Giada well done.

This is one of my favorites. Great for cold weather or to take to freinds that aren't feeling well. I like to eat it with a piece of crusty bread. Don't change a thing!! The receipe is perfect the way it is.

I absolutely love this! I have made it three times and its great. For the sake of cost, I did substitute a ham steak, diced and pan fried in a bit of olive oil til dark and crispy, for the pancetta and it works fine.

Everyone loved this soup. The flavor is amazing. I forgot to buy artichokes for the soup and used 1/2 a bad of frozen spinach instead. This will be regular soup on the menu at my house. I brought the leftovers to work and several people wanted the recipe as it smelled and looked so delish. All I can say is YUMMY!
