This was an absolutely scrumputious dish. Was't sure about the capers, at first, since I really don't know what they are but went ahead. This is part of the flavor of this dish.

This dish was very good and heat up well the next day. Took longer to cook the thighs than indicated in the recipe and shorter to cook the breast so keep an eye on things so that you don't overcook the chicken. Will make this again.

I was supprised how close this recipe came to the one I grew up with that my mom made on special occasions. This one is easy and delicious as-is. But I then made a few changes like leaving out the chicken broth and using tomato sauce instead. Also, roasted red peppers since I had several jars on hand. Mushrooms, sauteed (family tradition and no capers because I never seem to have any for some reason. And boneless, skinless breasts can't be beat! Also, for a more full bodied flavor, use a good merlot or zinfandel instead of white wine.
A couple of reviewers remarked the chicken was tough. Well I cook mine for much longer than 20 minutes! Usually closer to an hour, with a lid on. You can also just pop an oven-safe skillet into the oven at 350 and bake it. This added cooking time both tenderizes the meat and further reduces the sauce. You won't believe the difference in taste intensity. If you get it too thick just add a little wine to thin it a bit. Try it!
And for any leftover sauce - boil up some spaghetti tomorrow night.
NOTE: I use basically the same sauce for my lasagna base. Just add your favorite sausage to the mix.

Made this for a dinner party. I had to omit the capers as my wife doesn't like them (bet they would have been good in the dish though. Easy dish, fast to get going and just leave on the stove until ready to eat. A huge hit with all my guests. Served with other dishes presented in same show (Parmesan Smashed Potatoes and Chocolate Anise cookies which made for a great dinner along with salad. Will definitely make again.

Nothing special about this recipe - just the usual chicken with tomato sauce. Still , it is nice to have an hot hearty meal that is easy to prepare.

I reviewed several other Chicken Cacciatore recipes and this one seemed the most simple to make. The chicken turned out moist and was falling off the bone, maybe because I let it simmer for 1 hour. I used roasted red bell peppers instead of a fresh one and it still turned out great.
