This is a great recipe'. I made homemade pasta which helped kick it up a notch or two. Very tasty!

DO NOT over do the lemon zest (IMO 1 tbsp is TOO much, but over-all I really liked it, but I have to agree that the egg seems a little much. Maybe I cooked it a little too long (but not on a high heat...it just seemed extra thick. Tomorrow when I heat leftovers I'll probably add some extra cream to thin it out a bit. I did use extra pancetta and herbs, so it was nice and flavorful. User error perhaps?

Literally one of the best pasta dishes I have ever eaten. I make this only once or twice a year because it is very decadent but soooo worth it! However I would not classify this as an easy recipe, it is very easy to take a misstep when the eggs yolks go in the pan. However done right, this is simply spectacular!!!!

It was very good! We had to add more cheese, salt, and pepper. But it felt it like was still missing something. But overall it was a very good dish I will repeat. We also added Port. Mushrooms. Perhaps more Garlic next time!

Good, but "carbone aira" in Italian (where the name is derived literally means "coal air". This recipe needs a fair amount of black pepper, as the name implies, to really make this a bit more authentic. The walnuts and lemon zest are a nice touch but not necessary, but a sufficient amount of black pepper wakes up another flavor and gives it one additional dimension and keeps the dish true to its Roman intent. With the black pepper, 5-star. Without it, 4-stars.

This is one of my most made dishes. I won my now fiancee over with this recipe. Remisarna- I'm wondering if you did everything as called for? I've never had this recipe taste like egg in any way and i've made it 10+ times.

What an awesome recipe. I used it with my leftover Thanksgiving turkey, and it was absolutely perfect. I was a little skeptical because I had never made a carbonara recipe before, but this was rich, easy, and a very satisfying use of Thanksgiving leftovers. I served it to three friends that were over for dinner, and they all loved it as well. Everyone had at least seconds, and some even had thirds! I will definitely make this again, either with turkey or chicken. It's a keeper!
