Delish! A last minute search on foodnetwork for a recipe calling for shredded chicken. Glad I found it. It was the easiest thing to do. Froze the pancetta for 30 min first to make the chopping easier. I used the herbs from our herb garden so they were so fresh, and I think that played a big part of the flavor. I halved all of the ingredients and only used 3 yolks, and a bit less than half of the cream. Omitted the nuts. For 2 of us it was perfect and really good! Will definitely do again.

I have to agree with the other reviews that said this was bland. I was pretty disappointed. I felt that there was too much cream, the sauce was way too runny, and it was lacking in flavor. This was nothing at all like carbonara I have had in Italy. I did use bacon instead of pancetta because pancetta is just too expensive. However I don't think this affected the outcome. I also felt this recipe was very costly. Pancetta and store bought roasted chickens aren't cheap! Add in all the other ingredients and this meal can easily run you $20 or more. It was not worth it to me. I won't make again.

So easy to make. The whole family loved it...even a picky three year old boy and a picky seven year old girl.

Used dried herbs and angel hair pasta. Buying the rotisserie chicken saves a lot of time. Sauce gets thick fast so watch it. Needed extra salt and pepper table side. Overall really good!!

I followed this recipe but found it to be a bland and heavy. I was thinking that there needed to be more of a punch in flavor, but I trusted in the recipe and was disappointed. I thought that the little bit of freshly grated lemon would lift it, but it made it taste a bit soapy. I won't be making this again.
