Directions

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

I love, love LOVE this recipe. There is a typo, the recipe should read 1 cup of chicken stock as Giada says in the video, not 1/2 as listed above. My grandma usually puts about a tablespoon of garlic and 1/2 cup of diced yellow onion in hers, giving it a little more flavor. (She also uses Taylor dry sherry in the sauce). A big hit with my Mom (a great cook) who said she has trouble getting Chicken Piccata just right. The chicken itself came out great, but the sauce was far too lemony and I had to doctor it with more stock. This is after I reduced the lemon juice down to 1/4 cup and added it at the end, as others suggested. Next time, I'll add juice sparingly and taste test after each addition. This was my first time making Chicken Picatta. The only reason I did not rate this 5 stars is because I thought the amount of lemon juice was way to much. I did add a small packet of Knorrs no sodium chicken bouillon, salt and more water to tone it down a bit, I just cooked the sauce a little longer to reduce it. This will be my go to recipe for Chicken Picatta. I made this tonight for dinner and it was so good, plus it was easy. Instead of regular pasta I served it with fresh zucchini noodles that I made in my spiralizer. I have made chicken piccata before several times using wine but, this is the first time hubby said "It's delicious, it never tasted this good!" So, Giada thank you this is a keeper. I used a little more than 1/3 cup of lemon and I cup of chicken stock. I put the parsley in the sauce as it simmered. Then just it with the spaghetti. This sauce is pretty good - 3.5 stars. I enjoy parsley in other dishes, but I thought here it overwhelmed the rest of the ingredients in the worst way. I will omit it next time. After reading many of the reviews on this recipe I made it last night. I am glad I saw the review where the person had watched the episode video(not sure where they found it I like watching the episodes too). That person stated that Giada used a cup of stock, not 1/2 cup like the recipe lists. That may be why many stated the dish was too lemony. I also took one persons advice and added some white wine to deglaze the pan, added a minced garlic clove then the stock and not quite all of the capers. I used only the sauce portion of the recipe, which was DELICIOUS!!! I used a seasoned flour dredge, then egg and then panko breadcrumbs on pounded-thin, lemon/pepper marinated organic chicken breasts, which I then fried until crispy. Doubled the sauce portion of the recipe, (using organic meyer lemon juice) then topped the cutlets and served it with garlic-butter mashed potatoes and steamed artichokes. Excellent! I cut back on the oil and butter, so it took a little longer to brown well. I also added about 1/4 cup of dry white wine (Pinot Grigio) to deglaze the pan. I added marinated artichoke hearts (because I like them) and served it over angel hair pasta. My husband loved it and is taking the remainder to work for tomorrow. This is perfect for a weeknight meal! So easy to make, yet flavorful. The first time I made this I forgot to butterfly the chicken breasts so I had to cook the chicken a bit longer so that it could cook through but that wasn't a problem. Pinot Grigio from Italy is always dry...bone dry with great minerality and acidity. Pinot Gris from Alsace or Oregon can be medium-dry depending upon the winery/winemaker style. Same grape, differing terroir. item not reviewed by moderator and published
