I've tried out many different chicken piccata recipes and I think this one hits the mark. The only thing I would add to it is 1 tsp of dijon mustard. I think adding the mustard adds a unique element to the sauce while at the same time providing a nice thickening agent if you prefer your sauce to be on the less runny side. Otherwise, this is a great recipe!

This dish was easy to make and delicious to eat. One way to make the chicken especially tender: pound it with a mallet before dredging it.

This was a huge hit at our house. I served this with the lemon spaghetti. I thought it was odd that other reviewers found it too tart - I wonder if they were using that nasty bottled lemon juice instead of fresh lemons?

After making this dish several times, we decided to change it up a little bit. Once the chicken and sauce were finished, we sliced the chicken into bite-sized pieces and placed them over a bed of fresh lettuce. Then we added croutons and cheese. The sauce was used as a dressing! It was a huge success!!!! We have gone so far as to take this to family picnics now. It goes extremely quickly.
