    This has become one of my standards that I can whip together fairly quickly as I usually have all of these ingredients in my kitchen. I have substituted aspargus for the spinach (finicky sister-in-law and it came out great. Highly recommend this dish!

    OMIGOSH this was good! Easy and quick to make. Kids can help and we used fresh baby spinach...very very good.

    Watched this show and made this meal the same day without writing the recipe down.. Thats how simple this meal was to make. Also, I had outstanding reviews from the guest at our party..

    I made this for Valentines Day. It was very good, but it took me longer than the suggested times. I think I spent nearly an hor preparing and cooking. I would suggest practicing this a few times before preparing it for a special meal.

    Excellent recipe and easier than it sounds.

    If you try this, definitely get the right size chicken (3 oz. and flatten enough to fit the proscuitto on top. If the chicken is too thick, it doesn't roll as easy as a thin piece. And thaw the chopped spinach EARLY enough in the day. Both times I've made this, I thought it would thaw more quickly.

    Also, I added some garlic to the olive oil before cooking the chicken for flavor. It seemed to need this one last ingredient.

    Loved this recipe. I had left over creamed spinach from the night before and used it for the filling, also, didn't have the prosciutto, used thinly sliced ham instead - tremendous. Will make again for sure..

    I made this dish and was suprised at how good is came out. It was also so easy. However, I substituted the frozen spinach for fresh spinach sauted in butter/evoo and minced garlic. It turned out very delicious.
