I tried this recipe and have ended up making over and over it's simple but elegant and delicious. I've prepped it ahead and it makes it very easy to cook as well.

This is excellent and easy. I used to watch Giada's show but she uses too many ingredients which you have to go broke for, especially things like "rose water".......huh? I am an italian cook, ethnic italian, I am sure her food is good its just way too time consuming to make. This dish was an exception, few ingredients and an amazingly delicious outcome, 5 star restuarant quality.

I recently started watching food network chef shows - and I really enjoy Giada's recipes to I came online to look some up. For this recipe, I only had 4 chicken cutlets and no prosciutto handy - so I fried up some bacon. I also didn't have frozen spinach - so I sauteed half a bag of fresh with a little olive oil, salt and pepper. Takes literally a minute. I only used 9 ounces of broth but I kept the lemon juice the same. When I was reducing the sauce - I gave an extra squeeze of lemon. Everyone in the family enjoyed it! I'm looking forward to trying more of her recipes. I think tonight will be chicken carbonara!

I made this tonight for myself and the kids (10,5 and they both made faces when I put their plates in front of them, and neither of them wanted the sauce on it. However after the first bite they were both pretty quiet until they were done. My daughter even went back for seconds. I'm sure my wife won't believe me when I tell her the kids loved it. I served it with some cubed fontina on the side. Can't wait to make it again for my wife. Tastes and textures change with every bite.

Very tasty recipe. I did change it a little bit. I used reduced fat and sodium chicken broth, and no salt at all because the cheese has plenty. I also used a mixture of shredded Motzerella and parmesian instead. I would hate to see what something like this would cost on a menu at a fancy restaurant. I made it cheap myself, and my family loved it.
