Ever notice the number of positive ratings Giada's recipes get? There's a reason. They're all delicious and relatively simple -- like all good Italian food. They also rely on quality ingredients. This one is no exception. I've made it several times and I've actually complimented my own cooking...something I NEVER do!
Do season the skin-on chicken well before you start. I use 4 drumsticks and 4 legs. I add a tad more garlic and dried herbs due to the extra chicken. Tonight I accidentally added a bit of dried rosemary instead of thyme, then added a pinch of thyme with the oregano and it still turned out excellent. If sauce is too skimpy, try adding a bit of water (say 3 Tbl in the final cooking before the butter to "stretch it". Enjoy this dish. My family loves it.

This is a good chicken with artichoke and potato recipe but if you have lived your entire life iin Chicago you would take one look and say "this is not vesuvio". Sorry but Giada misses the boat on this one.

I swear it felt like it took HOURS to prep and get this stuff cooked and when it came out it was soooo not worth the effort. It was very bland and boring. Which was surprising because usually I love Giada's recipes her stuffed shells arrabiata is my all time favorite pasta recipe. Anyway, I doubt I'll make it again, but maybe if there were more sauce and other veggies as other reviewers suggested it would be tastier.

I absolutely love this recipe! I have made this recipe for a few years now. Everyone in my family loves it. The only change I make is to double the sauce portion of the recipe. I make it when we have family visiting, I double the recipe (forths of the sauce . It is always a crowd pleaser!

Definitely a keeper! I made some adjustments as many other reviewers did--i did not have artichockes, so I added carrots. Also, I dredged the chicken in flour and used skinless thighs and drumstics. I let the sauce boil for a few minutes at the very end as directed by the recipe, but did not add any butter. The result was fantastic!!!! The sauce was quite thick and very tasty, as I added a good amount of salt and pepper. I love chicken and always look for ways to make it fast and easy, this is a great recipe!!

This recipe is a little bit different than what my family is used to. Even so, they love it. I love the fact that it's a complete meal in one pan.

This is a wonderful one-pot chicken dish to add to your repertoire. I made some minor adjustments to the original recipe with delicious results. My husband does not care for artichokes so I eliminated them from the recipe. I dredged the chicken in flour before browning in the pot. I love onions so added one medium onion to the pot. Preparation was easy - items I already had on hand and prepped within 30 minutes. I served the dish over a bed of fresh baby spinach that wilted gently with the heat of the gravy making for a beautiful presentation and healthy, delicious meal. My husband called it a keeper and I agree!

My sister and I cooked the recipe as it was except we substituted salted butter for unsalted butter, since that was what we had. I thought the flavors were great, the potatoes soaked up all those wonderful pan juices and didn't need any extra salt. I did think, though, that more sauce would be nice. It reduced more than we thought it would. So we might increase the sauce ingredients next time. Fantastic!!!
