I love the crunch of this cookie - even without the chocolate on it.

To make these gluten-free, I used 2TBS rice flour and 1 TBS coconut flour instead of 1/4 C regular flour.

I added some toasted pecan to this recipe with a little bit more flour and coconut and it really helped eliminate that excessive sweetness. Really good with the slight nutty flavor (: I also cooked them at 350 for 8 minutes and added less chocolate on top (they're good without chocolate too

very greasy, and way too sweet. i feel like i'm eating sugar, but not cookie. i won't make this again, should've read the reviews before making them. doesn't need that much time, but not worth and ingredients and calories for sure.

Based on previous comments, I decided to add more flour, and more cocnut to these. I baked them on a cookie sheet, using about 1 tsp for each. I baked them at 350 and watched them (maybe 8-10 mins, and then when I tried to get them off the cookied sheet they were to greasy and not coming up. So I waited 3 mins or so untilt they hardened a little and it worked out well. Nice and crispy, very tastey. I am now going to use chocolate truffles melted down to drizzle on them. Recipe yields about 32 cookies, and some of them stick to much to the sheet so subtract about 5-6 for that factor. Overall I know what to do next time.

I wanted a treat but ran out of eggs so I tried this. They spread and connected so I used a pizza cutter before they cooled. I didn't use parchment but I didn't have a problem with them sticking. They actually dripped butter when I picked them up. It was more like syrupy sweet, greasy coconut brittle but without the coconut flavor. They tasted good if u love butter and sugar. They would be better crumbled over ice-cream but not as a cookie.

Awful! What a sticky, oily mess. Wasted all my money, time & ingredients. I followed the recipe exactly & used a tablespoon of dough, six on one sheet - the calculations are off because this would only allow you to make 10 'cookies' - messes - not 18. Perhaps a teaspoon would work better. Mine all ran into one another & the entire cookie sheet was covered in an oily, gooey, sticky mess that I had to scrape off & throw out. Threw the rest of the mixture in the bowl away.

the end result was yummy, but I had to make a few adjustments. I put about a teaspoon per cookie rather than a tablespoon. They were just too big and ran into each other the first time. They also got too dark so I put my oven down to 350 and kept a close eye on them and then they were much better!

Very delicious! I think they are perfectly sweet. I am not a huge coconut lover, but these cookies taste amazing and are very easy to make! I agree with another post I read though, 8-10 minutes is too long to bake. I did mine for 6 minutes.
