    I added one teaspoon Orange extract, one teaspoon Anise extract, used Splenda in place of sugar, and made cookies by pinching the dough and rolling into a ball then flatten the ball with
    Three slapps and baked for ten minutes on an ungreased cookie sheet they puffed then cracked.

    Great flavor and texture. Extremely easy to make. Just a hint of anise (needs a little more for my taste. Would be great with hazelnuts chopped up into batter too. Does she do anything wrong?

    ...hands down the best biscotti cookie recipe I've tried. Followed the recipe exactly with good results, used a sprinkle of flour on my hands to form the logs. I also like the suggestion about adding flax seeds, and a portion of wheat flour.
    I am making these again this morning using lemon zest & white couverture chips, hmmm maybe a few almonds, too. Grazie, Giada!

    well the taste was good but my problem was the dough it was too sticky to work with it and wen i baked it the 1st time ,it began to have cracks in it,can anyone tell wht was wrong

    Great cookies! I cut the second baking time in half so they remain soft and chewy. I always serve these at my absinthe parties and they are a big hit!

    I double the recipe and use all whole wheat flour, add 1/4 cup of almond flour, and 1/4 ground flax seed and reduce the butter to 11/2 sticks ( instead of 2. I also add 1 1/2 tsp almond extract instead of the anise seed. It is amazing, my kids love it, and it is healthy! This is one of my favorite "cookie" recipes!

    I make these all the time and they are just awesome. I wouldn't rate it as "medium" level rather "Easy" and I wouldn't call myself a baker. My little boy loves to dunk them in coffee. Good job as usual Giada.

    Thanks , Giada, this reciipe has become my Holiday Tradition! Today I took them to our health club Christmas party-everyone loved them. Tomorrow I take a batch to the waiters and busers at our primo Italian restaurant. They wait every year for them! And they aren;t so hard to eat so no worries of broken teeth like my old recipe.

    This is one of the very best Chocolate Anise cookie recipes I have come across. I tested it today and the cookies come out moist and not dry like many others recipes I have tried. Then I got a little creative and changed it up a bit. I used 1 teaspoon of anise extract and 1 teaspoon of orange brandy flavoring along with 1/2 Cup of grated tangerine peel. They came out yummy and I will be taking a batch over to my in-laws for Christmas. This really is a very easy recipe. Yes, the dough is sticky, but all you need to do is spread it on parchment paper placed over a cookie sheet, then shape it with a wet butter knife. This is a keeper for my recipe box. Thanks!!
