    This stuffing is fantastic. It tastes like cheese, bacon and delicious. From now on, even if I'm not making this recipe, I'm using ciabatta bread, it's delicious!

    This was just ok for me. It sounded very special but did not taste that different then any other stuffing. The turkey that went with this recipe was to die for though!

    I am rarely disappointed in Giada's recipes and this one is no exception. I varied from her recipe in 2 ways. I used bacon instead of pancetta and I used more chicken broth than what she called for. The outcome was a GREAT tasting stuffing which my whole family raved about. Definitely a winner! TY Giada

    I loved the idea of adding pancetta to dressing. We fry our turkeys, leaving us sans drippings for flavoring the dressing. The pancetta worked great. The one major change that I made was that I used cornbread instead of ciabatta because there are some things a Southern girl just can't do & non-cornbread dressing is on that list. I also couldn't find jarred chestnuts & had to used canned ones packed in water. The end result was a colorful & flavorful dressing which may become a family tradition.

    I'm Sicilian and remember the holidays with my grandparents very well, those memories are always with me.
    I have tried this recipe last night after seeing it on your yesterday 17/Nov/2007. My son thought I was crazy when I wanted to go to the store to purchase items I didn't have in my pantry.
    We all loved the stuffing and I will be making it to bring to my sisters on Thanksgiving Day. I'm also going to make the turkey and squash lasagna to see if they like it. I know I will because, I love to cook and try new things. I have been an avid TV fan of "Everyday Italian."
    I send my thanks and holiday wishes to all of you on the Food Network.
    PS My other all time show is Malto Mario, to which I love his recipes and his is a sweet nice crazy cook. He reminds me of my father.

    ok, ok. Where do you get jarred, frozen, or vacuum-packed chestnuts??? I'm tired of threatening my fingers with a sharp knife.

    This is a great variation of a Thanksgiving staple. Still adheres to a traditional stuffing but different enough to please those looking for a new way to prepare it Myhusband and I are self-proclaimed purists when it comes to Thanksgiving dishes and this satisfies both our desire for traditional Thanksgiving flavors and our inclination for gourmet tastes. This is our new go-to stuffing recipe!

    I made it last thanksgiving (2006 along with Giada's turkey recipe, and butternut squash lasagna. It was all a big hit
    with my 11 guests, they all said it was the BEST thanksgiving dinner they ever had and voted on me having thanksgiving dinner at my place from now on. well, i'm repeating everything again this year for 16 people! it was all very easy to prepare and tasted delicious!
