I love to make Giada's aunt Raffy's stuffing every year, but my son finds is a little too sweet, so I decided to try this one since I always have plenty of chestnuts left over. He loved it! He wants me to make it every year for him now. And don't worry if you can't find (or afford pancetta. Bacon works just fine, but try to get the center cut. It has less fat and more flavor.

I made this recipe for Christmas and what a mistake that was. The ingredients were expensive ($20 for a jar of cooked chestnuts! and some difficult to find. The preparation was much longer than indicated in the recipe, and the multitude of ingredients provided overkill in the flavor department. It was way too salty and the majority of this $75+ dish went to waste. I have since tried another Giada recipe and was, yet again disappointed. Tip: Don't try the Rigatoni with Almonds, Breadcrumbs, and Peppers- you will have stomach pains from all of the oil-soaked breadcrumbs.

BEST STUFFING I EVER TASTED!. I love everything Guiada and this one was just as expected! I had no clue how to cook, then while on maternity leave last summer I started watching the food network and trying some things. I became the envy of my fiends and although I do have some Emeril, Rachael & Paula dishes.... Guiada is the one that made me me a good cook. Thank you!

The pancetta gives this entire dish a wonderful, rich, flavor. This is my favorite stuffing recipe! I omitted the chestnuts and it was still delicious. I found the inside a little too wet for my liking, so I popped it back into the oven for another five minutes at 300 degrees, and it was great!
