    I don't like traditional stuffing, but when I saw it on TV- I had to try it for Thanksgiving. My husband LOVED it, he asked me to make it again for Christmas. What a hit.

    I tried this recipe on Christmas. This was absolutely delicous. I read the reviews before making the dish so I cut back on the chestnuts as some recommended. I don't think that the chestnuts were all that obtrusive. I wished I had added the full amount. The Ciabatta Bread at Pannera's didn't look that interesting...kind of pale. I found a much better looking loaf at Kroger's. Also, the pancetta had spoiled (from Friday 'til Sunday...go figureso I used bacon and it worked out fine. The only thing that I thought was off was the preparation time. It took me a good while to do all of the chopping. I am also on the slow side. That won't stop me from fixing again. But, I'll be sure to allow myself more prep time.

    This recipe was almost exactly the way my Italian grandmother used to make stuffing - with just a few (very minor adjustments I was able to take a step back to my childhood and create the dish that was the HIT of my Thanksgiving dinner.

    I religiously watch Giada, and when I saw this recipe, I knew I had to do it for our family's Thanksgiving. My mother was skeptic, not being a huge fan of garlic. I must say, it ended up being a huge success! Not to mention, the recipe is incredibly easy, and so much fun to do.

    I couldn't find ciabatta bread or pancetta at my grocery (and I dislike having any kind of nuts in my food so I also removed the chestnuts. I used a 50-50 mixture of whole wheat bread and sourdough and it gave it a nice color and flavor. I also used about 6-8 slices of bacon (cut off large parts of fat instead of the pancetta. I also only used 1 1/2 onions and added a couple of chopped green onions for look and taste. My family is extremely picky and my husband doesn't care much for stuffing but everyone loved this dish. I had to give out the recipe as well. This is one for the books, everyone should give this stuffing a try, it's worth it!

    I bought the Chestnut from Chinatown which only cost $3. The quailty is not bad either. I cooked it for Thanksgiving and I thought it was a bit dry. I should have put more broth than the recipe required.

    My kids and family loved this Stuffing. Although I did not use Giabatta bread. the Store was out of Giabatta bread, so I picked a rustic Italian instead and it turned out wonderful. The combination of flavors was great. I will make this again throughout the year, not only for Thanksgiving
