I made this to add an Italian flavor to my Thanksgiving meal. My best friend is from Rome and she always feel a bit displaced with this holiday. I like adding Italian touches to our holiday meals to include her cuisine in our celebration. She loved the stuffing. I also added a bit of prosciutto to the stuffing and it added a great flavor. If you live in Southern California you can purchase fresh baked ciabatta at Trader Joe's.

Last Thanksgiving I caught and episode of Every Day Italian and boy was I in the right place at the right time! When I saw the Cibatta stuffing I thought it look like a great spin on a holiday classic. I made it for my family and now we are all hooked!! Even my father who is a huge fan of stuffing baked in the turkey is asking for it again this year. It was so easy to make. Not only was it incredibly yummy, it was moist. Thank you for such a wonderful recipe that will definitly be handed down thru the family for years to come!!!

My family loved the recipe but they were not fond of the carrots in the stuffing. What can I substitue in place of the them??

This was a good dish, not a 10 in my book. I found chestnuts at Wholefoods Market. They were a little pricey.

I've made this dish 2 times and everyone loves it. Some ingredients are a little hard to find where I am, but believe it or not, the same store had the Ciabatta and Pancetta. I found those items at a high end "Publix" and the chestnuts at a "World Market". Otherwise the directions were easy and the results were awesome.

I cut this recipe in half because I was just cooking for myself and one other person, and it was the perfect amount, with tons of leftovers! It felt so good to have homemade stuffing, and the ciabatta bread really makes this recipe!! This was so flavorful and tasty, yet still tasted just so clean and healthy.
