For those concerned with the cost of chestnuts, Trader Joes has them for $3.99 for a 6 oz. vacuum pack, and diced Pancetta for a reasonable price too. It's worth getting the right ingredients to make this special dish.

I am italian and normally never made stuffing, my family lives in Italy so we never really have a big Thanksgiving feast, but last year my mom spent the holidays with us so we decided to give this recipe a try, it was delicious. We liked it so much my mom took the recipe back with her to Italy and we both plan on making it a staple for our Thanksgiving dinners. Grazie Giada

This is the most delicious stuffing! I saw it on "Everday Italian" a few years ago and have been making it ever since for Thanksgiving and Christmas as well as my holiday pot luck at work. My entire family devours it and my sons requested that I make at least a double batch this year because they love it so much. It's also easy to prepare!! This is truly an excellent dish. I too joined to I could rate this recipe. It is FANTASTIC! I am speechless. Stuffing can be a tricky dish... not moist enough to soaked in butter and most of all just lacking the flavor... but not this dish. It turned out perfect! I could not imagine ever making another stuffing again. I made this in particular to make her Italian stuffed meatloaf (which was also divine but I left with what is now my Thanksgiving staple. As a last minute dish this can be quite costly as others have mentioned with the roasted Chestnuts. but if you plan a little in advance you can find roasted Chestnuts online for WAAAAYY less (amazon has them as well as many other places One substitution I did make was I was not able to find the Pancetta (lord knows I tried so I did a last ditch effort and used Louis Rich Turkey Bacon (not all turkey bacon is created equal and it turned out wonderful so now I keep my alteration and also save a little extra $. Happy cooking!

Made this for Thanksgiving but never got around to writing a review until now. Had many rave reviews on this recipe. I did not use the chestnuts since they are quite costly so substituted sauteed mushrooms. I did use the pancetta which was lovely but I am going to try using the bacon next time as the pancetta can be costly as well. Otherwise, I made this recipe as is and it definitely is a keeper.

I've never reviewed a recipe before but thats how good this one is! I made the recipe for the third year in a row and it just keeps getting better! I make mine vegan but no one seems to notice, that is minus the pancetta, with olive oil instead of butter(which by the way is very italian, and vegtable broth. I look forward to this recipe (especially the chestnuts! all year. Enjoy! It is so easy to make; you'll never go back to the boxed stuff!
Oh and I roast my chestnuts in the oven instead of using the canned ones, fresh is always better right? It only takes 20 minutes and then you can munch on a few before you add them to the stuffing...
