While I must admit, I would agree with the person below that the chestnuts added a lot of cost, it was certainly a delicious stuffing. The ciabatta bread gave the stuffing a nice little chew to it from that great crust. The bread should have been a bit staler, but that was my fault for buying a very fresh bread on Wednesday and expecting it to be stale on Thursday. (Slice it up and leave it in the air to speed the process.
Otherwise and absolutely delicious recipe and it will stay in my book.

I registered so that I could rate this recipe. I made this stuffing last year (2009 and I don't intend to turn back. This recipe has replaced the outdated 50's stuffing in my family.

I made this for my first Thanksgiving I cooked all on my own. Our family loved it and now it's part of our Thanksgiving tradition each year. I can't find chestnuts in my area, so I improvise with chopped pecans and it comes out wonderful.

This is the best stuffing recipe I've ever made. May family went nuts the first time I made it and now it has become a Thanksgiving tradition. I highly recommend it.

A few years ago I branched away from our family's traditional southern cornbread dressing and tried this. It is now a MUST at Thanksgiving. At our meal this year, someone else offered to bring stuffing. Um, no. This is one thing I won't change. Not too difficult to make except for lots of chopping. But for Thanksgiving, I almost always chop everything for every recipe a day or two before so I can just grab and go. It can be difficult to find chestnuts in some areas. Some years my grocery has them with the baking goods, others with Asian foods (apparently they aren't aware that they are different from water chestnuts. I'd suggest looking early for them as I've found them sold out as well.

I made this for Thanksgiving a few years back and my family raved about it. It is now expected that I make this stuffing. I like to only use half of the ciabatta and for the other half I use a multi-grain bread with the seeds in it. Its a great texture change. Also I don't use chestnuts b/c they're a little expensive and I just use plain 'ol bacon. But with my changes its still the best I've ever had.

I made this for Thanksgiving this year and everyone was in love with it! It took me a while to find pancetta but I finally found it a Whole Foods. I seriously recommend this recipe to anyone who wants to impress people with how wonderful their food tastes :

I am not a big fan of stuffing, but, when I tried this recipe it really was the best I've ever had. I did this recipe at Thanksgiving & Christmas and my family raved over this stuffing, my mom told me that the one at Christmas was better and the only difference was at Christmas I didn't use the parmesian cheese (forgot. Also I used bacon instead of pancetta, I like bacon better. Try this recipe you will NOT be dissapointed!!!!!!!

I don't like stuffing. At least that's what I thought before I tried THIS stuffing. I usually make stuffing because others like it. Frankly I never saw the point for serving it. This is moist and the ciabatta bread gives the dish a little spring to the bite. It's beautiful and yummy! Thanks for sharing Giada!
