    This stuffing is absolutely outstanding, Giada! Brava!
    I began making it a few years back after seeing the Italian Thanksgiving episode, and have been doing it ever since. EVERYone, and I mean EVERYONE loves it! It's always the first dish we run out of because everyone keeps going back for 2nds, 3rds ... In fact, I'm pretty sure my husband could eat just this dish and nothing else at Thanksgiving and be completely content!
    We now make it throughout the year from time to time since it's such a favorite and so easy to make.

    I don't eat pork, so I omit the pancetta. Also, the first year I made it, I forgot to buy chestnuts so I omitted those as well. We've never missed them in the dish, it's still so tasty!

    Some years, I have substituted vegetable broth in place of chicken broth for the vegetarians in our family ... still delicious I have found that I use a bit more than the recipe calls for. Also, I use grated Pecorino Romano instead of Parmesan. Being lactose intolerant, I cannot do cow's milk cheeses but sheep's milk cheeses are fine.

    The only change I made to this recipe was to roast fresh chestnuts instead of using jarred.

    My entire family at the Thanksgiving table loved it. I was worried at first that there was too much onion or that the pancetta would prove too salty, but it was excellent.

    Been making this stuffing for 3 or 4 years now because it is such a hit. My family who is very picky and don't like the store bought stuffing absolutely love this! I always have to make double this recipe because everyone loves the leftovers.

    I LOVED this dish. It is unique and very flavorful. If you want to save some $$$ and still have similar flavor, repace chestnuts with sliced baby bella mushrooms and replace pancetta with regular bacon. Cheaper and still an asked-for favorite! :

    Incredibly tasty.
    I used other recipes from the website to use up the pancetta and ciabatta.
    The chestnuts I found at a local produce place for half the cost of the well known markets.
    A little diggin and I was able to make this both yummy and affordable.

    I love this stuffing. I have rendered it a bit. I eliminated the chestnuts because my family doesn't like them. In place of the chestnuts, I brown a roll of(Bob Evanssausage(original recipe and mix that in with the ingredients. We really love it that way.

    I tried this stuffing on my family when I first saw the episode four or five years ago. (I also made the turkey according to the accompanying recipe. My family raved about it. Even the kids wanted more. Now they ask me to make it every year.
    I have made it with and without the chestnuts and find that no-one misses them. I have passed the recipe along to many friends as well. It's the best!
