    I tried tis after watching the show and I must say that it has inspired my family to add this dish amongst our most favorites!! It is worth the effort in finding the bread and the ingredients for this wonderful side dish that will stay with you beyond the traditional holiday dinners and beyond!! Thanks for helping me show my love to my family in a way only food could inspire!! Love it!!

    iI am not a fan of chestnuts so used potabella mushrooms (chopped large instead. I make this every year now insted of the cornbread jalapeno stuffing . Everyone always wants my leftovers so I have to double the recipe

    I have NEVER liked stuffing before, but for some reason this one caught my eye and when i made it i LOVED it! My family wanted me to make another one the next day because they had finished it all :D

    I have been making this recipe for the last five Thanksgivings and it is a true hit at our meal. I can't always find chestnuts or have the time to prep them so I will sometimes substitue with hazelnuts and it is equally delicious!

    I'm not a 'make everything from scratch' Thanksgiving cook, but found myself with some old loaves of bread on Thanksgiving and decidied to try it. Probably the best stuffing i've ever made. We didn't have chestnuts so I added a few pecans. I also needed the pancetta for my string bean recipe so i used sausage similiar to her other stuffing recipe. Can't wait to use chestnuts next year.

    Every Thanksgiving I like to try at least one new recipe to add to the repetoire. I made my old standby cornbread with sausage stuffing (always a hit AND this new Ciabatta stuffing. Absolutely fabulous! We all loved it. Very tasty... love the chestnuts & pancetta combination... It'll now enter the hallowed halls of my "old standby" favorite holiday recipes.

    While this stuffing doesnt have ANY of what I consider traditional Thanksgiving tastes (sage, thyme, etc., it is WONDERFUL. My entire family and I enjoyed it thoroughly. Some of the ingredients are a little pricey ($10 per jar of chestnuts and $12 for pancetta, but it was worth it. I was slightly concerned about what looked like an awful lot of chestnuts being added to the mixture, but I made the recipe exactly as it was written, and I'm glad I did! No tweeking, no additions or subtractions were necessary. I will make this stuffing again and again (but not for Thanksgiving. I kind of missed those traditional tastes on the holiday. Great work Giada!

    I made this for a Thanksgiving potluck, and it was the first stuffing to go, out of about four. The ingredients are definitely costly and hard to find, but worth it--just don't wait till the last minute to get them! I followed the recipe exactly except that I added a few more chopped fresh herbs (thyme and sage and quite a bit more chicken stock (maybe another full cup. I don't understand the people who didn't use the chestnuts--that's what makes this recipe! Get them at Whole Foods, World Market, or order them online.
