My little guy (3yo loves to watch cooking shows. We watched this one together on a recent rainy day and he immediately wanted to make this (I had already watched the show earlier in the week and had already bought ingredients!. So easy for my little guy to help make and the fudge is really really good! I wanted to add nuts, so i did half walnuts on one side and salt on the other. Then i sprinkled a little salt on the walnut side! We have stored them in the freezer (i will eat them all up in one sitting if not : and the fudge is so good when it's firm and cold!! I will make this again during the holidays and give to friends as gifts. So easy even a 3 year old can do it!! :

After having and making many different variations of fudge, this is by far my favorite. I made the recipe with Ghiradelli Bittersweet chips and I did omit the vanilla since I am not a fan, other than that I followed the recipe to the "T". The fudge melts in your mouth and the consistency is perfect. The background flavor of cinnamon gives this fudge a feeling of warmth that is perfect for the fall. The kosher salt on top makes you anticapate the next bite. This was so easy to make and even easier to eat!! Thanks Giada-I love all of your ideas and enjoy trying out your recipes:

I saw this on the show today, and made it tonight...For my first fudge making experience, ever.... THIS WAS AWESOME! and I'm very new to cooking, and it's soo sooo easy to make! I read the reviews and couldn't decide whether to use bittersweet or semi sweet (I'm not a huge dark chocolate fan,but didn't want to stray too far from the recipe. So, what I did was use a bag of the Ghirardelli Semi sweet and then just chopped up a 4oz bar of Ghirardelli bittersweet to balance everything out. It turned out fantastic!! And don't skip the salt at the end, it made it like.. a quadrillion times better! I kinda wish I would've added it to the bowl while I was mixing the stuff up. :

MADE THIS TONIGHT AND, OH MY WORD THIS IS THE BEST FUDGE I'VE EVER MADE. I USED GHIRARDELLI 100 0/0 4OZ BAR AND 1/2 CUP SEMISWEET CHOCCOLATE AND PUT IN ABOUT 1/8 TSP.OR LESS OF CAYENNE PEPPER.WANTED TO PUT IN PECANS BUT WAS OUT.AS HUBBY CAN'T EAT NUTS, BUT HOPE BROTHER AND WIFE,AND BROTHER-IN-LAW AND WIFE LIKES IT.WILL MAKE IT AGAIN WHEN MY G-DAUGHTERS COME VISIT, BUT WILL LEAVE OUT CAYENNE AS IT WOULD BE TO HOT FOR THEM..........WANDA A.THANKS A MILLION GIADA.

I really like this recipe. I am awful at making fudge. It either turns out runny or they end up hard. I figured I would give it another go. It turned out great. I was amazed. I made it a few times before I omitted the cinnamon and added chooped mint. It turned out really well.

This fudge was really easy to make. I love the combination of salt and chocolate. I added some ancho chile powder to the second batch I made.

This recipe is so quick and easy. I got a bit heavy handed on the cinnamon, yet it turned out wonderful. The fudge needed more then 2 hours to set, I made it the night before and let it set overnight in the frige. Now ny son asks "when are you making fudge again?"
    Thanks Giada!
