    I made this years ago and we loved it. My husband is not a cinnamon person, but even he liked it. It is very rich and definitely not low cal, but a great meal on occasion. I'm going to try to make a less fattening version this evening, so hoping I don't loose much flavor!

    This carbonara is a definite treat! It's extremely rich so this exact recipe isn't something I'd make often. It's a great dish to make for company, my family couldn't get enough!! I made a (superslimmed-down version of this recipe that I make often.

    This was decadent! I halved the recipe and made homemade pasta for the first time. A little of this goes a long way! This is a different technique that I'm used to when making carbonara. It felt like a kicked up mac n' cheese. A light salad would go nicely with this as a contrast to the richness of this dish. My husband who doesn't like cinnamon that you can taste in a dish, thought it added a nice touch. I also liked that there were few ingredients to prep. There basically was no prep. I will make this again when there is a chill in the air and a fire in the fireplace.

    Amazing good!!! I'm not a big pasta fan. I like it okay, but if I could never have it again I wouldn't lose any sleep over it. Till now. I tried this because it was different. Definitely will be making again. Just no time soon as it is very rich and fattening. Comfort food for sure! You gotta try it! I added a little extra cinnamon and bacon, not a lot.

    I was a little intimidated by this recipe at first. However, I totally nailed it. My guests absolutely loved it. Cinammon and pork, who would have thought....

    This has been a favorite of ours, but since we are doing the Paleo Diet now, I used unsweetened coconut milk, organic eggs, and Miracle Noodles (carb free noodles. I was worried the milk wouldn't thicken up like cream but it did and it's DELICIOUS!! No guilt eating it this way at all. Thank you Giada.

    Delicious. I've been making pasta carbonara for years and have never tried adding cinnamon. My family loved this! The cinnamon added a nice element. Very good. We didn't have any pancetta in the house, so we just used bacon, which was fine.

    Super Delicious Fettuccine Alfredo! Well... I'm not sure if this dish is fettuccine alfreado because the title calls it carbonara...but it tasted exactly like fettuccine alfreado. So if you like fettuccine alfredo, then you should make this one! That cinnamon background note was interesting...very mild. I'm really not sure how much I liked it...but... I thought it made this dish distinct.

    I also discovered pancetta for the first time making this! mmmm...I've gone on to make pancetta several times now with Giada's italian recipes. It's total staple in her dishes and its so good! She's made a pancetta fan out of me.

    MAKE THIS. I added peas because I thought adding something green would make me feel less guilty about the fat content. It made it look pretty and taste amazing! And yes, double the cinnamon.
