This is delicious and easy. Its very rich tasting. Don't forget the chives! (i don't recommend scallions I also think it goes really well with fettuccine versus another pasta. Dont forget that fresh pasta cooks faster than other pasta.

I made this for my boyfriend and I and I must say this is one of the best recipes I have ever made from Food Network! The only problem is that you cant eat as much as you want because it is ridiculously RICH! So here we have over pound of rich pasta and cant eat it all! I recommend making it for a large group of people who can eat small dishes at a time! Its wonderful!

This recipe is amazing. Giada is one of my favorite stars. She's done it again with this great pasta dish. You won't be disappointed. My tip is to use quality ingredients. Pancetta is key for this recipe. Try it, you'll love it.

Wow! What a dish! I have made this several occasions for my peers (college and my family and boyfriend. Each time it receives a rave review. The recipe is easy and will never disappoint!

This was very easy to make. I cut the recipe in half, only two of us were eating. I added chicken and mushrooms after the bacon and pancetta was mostly cooked. I used a 1/4 cup of half and half to cut down the richness... It was still really rich, very creamy. We tried it with half plain and half spinach linguini. Plenty of leftovers.

I would second what one reviewer said about marrying this dish if she could, except seeing this dish on a daily basis would be catastrophic to my cholesterol. you know, I could have used a little more cinnamon, but I followed the recipe exactly as written (okay, I cut it in half and it was perfect and creamy. Use the pancetta, it's worth it!!!

I loved this recipe. It was smooth and creamy with a delicious blend of cinnamon and bacon. It was very easy to make and I crave this now when I need a little comfort.

This is a recipe for carbonara--which means that the eggs are a main component. And someone said that it called for too much butter--but there isn't even a teaspoon of butter in the whole recipe! This recipe is a favorite in our house, but because it's so rich is only made on very special occasions. Last time was for my husband's birthday, and I used the pancetta as well as applewood smoked bacon--and extra cinnamon! It's a perfect meal--rich, filling, comforting, and FULL of flavor. It's rich because it's SUPPOSED to be rich--if you don't like cream and cheese and bacon fat, then don't make it. But for those of us who can appreciate it in moderation, and on the most special of occasions, it's the best carbonara recipe I've ever tasted. Thanks, Giada!

This pasta was very easy to make and everyone loved it. I added a little garlic salt for extra flavor and I used only one yolk, the result was perfection.
